In a mixing bowl, whisk the eggs, sugar, salt and honey until whitened.
Prepare your lime/lemon zest.
Add the flour, baking powder, butter and lime/lemon zest to the mixing bowl and stir until just combined.
Cover your mixing bowl with cling film and place in the fridge to rest for at least one hour and up to overnight.
Pre-heat your oven to 220°C. Meanwhile, lightly butter your baking tins and fill them up to 2/3 of the height.
Bring the oven temperature down to 200°C and place your baking tins in the oven for around 10 minutes.
