These little muffins will be in your oven in less than 5 minutes, made from ingredients you most likely already have in your fridge and cupboard, using only a mixing bowl a fork or whisk and muffin trays. You will be able to jazz up the recipe with vanilla seeds, berries, raisins, milk chocolate buttons, dark chocolate chips… Finally, they freeze really well. I have checked and they will defrost in less than an hour and a half, which means you can add them frozen to your children’s snackbox at breakfast and they will be able to enjoy them as morning snacks.

Ingredients

  • 1.5 mug self raising flour
  • 1 mug sugar
  • 1/2 mug milk
  • 1/2 mug vegetable oil
  • 1 egg
  • 1 pinch salt

Instructions

  1. Preheat your oven to 180ºC.

  2. Combine all your ingredients and poor the mixture into your muffin trays to make 10 little muffins. Feel free to get creative adding vanilla seeds, berries, raisins, milk chocolate buttons, dark chocolate chips...  

  3. Bake for 20 minute
