Where do you get your best recipes? Some of my favourite recipes come from my friends. Yes I tend to ask them A LOT for new recipes , I know, I know… I am a recipe addict however I am a good sharer too ;)

This wonderful quick and easy spinach lasagna comes from the very talented Perrine from 71bis a fellow French mum who creates fashion pieces to make you feel gorgeous day and night, inspiring isn’t it?

Anyway I am digressing.

When she told me “I’m doing lasagna tonight, I tend to make lasagna every other week for my family”…

…my first reaction was “How do you do it? Seriously? On a weeknight???” “Do you fit it in before or after , bathtime, homework, downtime, storytime (Arhhhhh you know the drill!!!)

…but then…

…she said “I have a great recipe, it will only take you 15 minutes” and I was all ears… so without further do here it is for you to try and please do not hesitate to let me know your thoughts in the comments when you have tried it ;)

Spinach lasagna

Vegetable packed lasagna in less than 15 minutes ⏰, yes you can! 💪

Ingredients

  • 500g frozen spinach organic preferably
  • 1 chicken/vegetable stock cube
  • 250g lasagna sheets fresh if you can
  • 40 cl single cream / soya cream I tend to do half half but you could do all single cream
  • 150 g emmental cheese / parmesan cheese I tend to do half half maybe worth trying ricotta?

Instructions

  1. Preheat your oven to 200ºC.

  2. Heat 20cl of cream with the stock cube in a saucepan.

  3. Once the stock cube is dissolved, add the frozen spinach and the remaining 20cl of cream. Cover and leave to cook gently for 6 to 7 minutes, mixing regularly.  If ever the spinach mixture gets too thick add a little bit of milk. 

  4. In a lasagna dish (20 x 25 cm), pour a little bit of the spinach mixture first so as the first layer of lasagna does not stick.

  5. Build the lasagna going: lasagna sheets, spinach mixture, grated cheese, lasagna sheets... finishing with a little bit of the spinach mixture (to ensure your last layer of lasagna sheet is moist) and grated cheese.

  6. Put in the oven for 30 minutes.
